Mac cheese. Can I get a big, fat people? A food group in my world. I could eat it every day. No, not exaggerating. And share this site I not a snob about ita box of Kraft with the fake powdered cheese is fine by me! Ugh, I so going to gain 20 pounds once Grey becomes a toddler. This is a healthier version. My thinking was that I could also testdrive him allergywise as it has a small amount of a bunch of things that could potentially be a problem. Yippeeeeeeeeee! I defrosted 1/2 cup of the butternut squash I made before. (see the Steweerecipe for cooking instructions). Cook 3/4 cup of small pastathe stars (aka stelline) are the perfect size for tiny mouths, but orzo is also a good one. Drain and set aside. Make a roueby whisking a1/2 TBS butter and 1/2 TBS flour in a medium size pot or pan. Slowly add a little over a 1/4 cup of milk, constantly stirring until it smooth and a little thick. Add the squash, then one TBS of cream cheese and a palmfulof shredded monterey jack cheese. I added a little salt and pepper as well.
Once again, I overestimated Greyson to eat big boy food. Sigh. This started out as a thick but ended up being turned into more of a pureafter he kept spitting out the chicken chunks. Hmmmm he trying to tell me he like to be a vegetarian. What I love about this one is that the squash goes a long way. I froze a ton so I have a stash for other recipes.
Cut a small butternut squash in half lengthwise and remove the seeds. Lightly oil a cookie sheet and place the squash face down. Bake at 400 degrees for 4050 minutes. Scrape outthe While the squash if cooking, salt pepper a chicken tender and sautin butter until brown on both sides and juices run clear. Chop into smaller pieces. Peel and chop an apple and steam for 10 minutes in the Beaba.
Add 3/4 cup of squash and the chicken to the apple in the Beaba. Pulse, keeping the mixture chunky. If your sweet pea isn a fan of the texture, you can use an immersion hand blender to thin it out.
This made enough for three 2 ounce servings, which was fine in the fridge for 3 days.
Okay, so I may have jumped the gun here. It sounded like an interesting combo at the time, but perhaps I overestimated Greyson development a tad. It tasted good to me! Sigh. I had such high hopes that he was ready to move on to bigger and better meals. Um, apparently not. Iswear I heard as he was spitting it out. So maybe I just file this one and do it again when he a little older. When, after two feeding attempts, I still got lemonface, I ended up making him yams carrots. Loved.
Peel steam one small yam for 20 minutes. Dredge a chicken tender through flour and cook in a skillet in nonstick butter until brown on both sides. Chop into small pieces. using the same pan, sauta round of chopped onions and a palmful of shredded carrots until soft.
Put all in the Beaba and pulse until the consistency is thick, but the elements still discernible. Keep your fingers crossed that your sweet pea likes it.
